I’m on a health kick this month and am doing my best to have raw food for lunch every day. So far so good! I don’t like having to think too hard about food and prefer to be able to just buy good food and then play with it. This is a result of soul food playing:
1 pink lady apple 1 quarter green pawpaw 1 carrot 1/2 fennel bulb
1 tbsp coconut oil plus 1 tbsp apple cider vinegar
Wash fruit and veg and peel if desired – I leave the skin on applesand take if off carrots and pawpaw :). Fine grate and layer separately on plate. Mix dressing and drizzle over. Garnish with sprigs of fennel off the bulb.
