4 ingredients for Mung bean smoothie

Did you know mung beans are very high in fibre – more so than fruits and vegetables and even better than wholegrains?  The soluble fibre in mung beans captures cholesterol in the intestines, keeps it out of the blood stream, and carries it out of the body.

This is easy peasy to make and very satisfying!


1/4 cup raw organic mung beans

1/4 cup organic shredded coconut

3 organic pitted prunes

1 small peeled aloe vera leaf (no bigger than 1inch is all that’s needed)

For a hot smoothie use 1/2 cup warm water and 1 cup boiling water

For a cold smoothie use 1/2 cup warm water, 1 cup cold water and 4 ice cubes


Pour 1/2 cup boiling water over mung beans for a minute or two then drain.

Add dry ingredients to vita mix or blender for about 1 minute.

Add prunes, then gradually add warm water first then remaining water.

*if using boiling water be sure to NOT add insert on top of vitamix or blender lid. This allows the steam to be released and avoids harmful explosions.
