Rainbow Salad

This heavenly summer salad is sumptuous and really easy to prepare

Ingredients

1/4 cup quality balsamic vinegar
1/4 cup quality feta cheese
5 fresh spears of raw asparagus (chop into bite sizes and 
place in bowl toped with boiling water to slightly soften)
1 mango peeled and diced
1 grilled red capsicum seeded and roughly chopped
1/2 cup sunflower seeds
a handful of fresh basil and mint roughly chopped

Method

Mix all ingredients together and serve.
