I just threw this together this morning and treated myself to breakfast in bed. Actually I’m planning on spending the whole weekend in bed resting, writing and slothing! Not sure whether I’ll pull off staying in bed for the weekend, but I’m certainly going to give it my best shot – after yoga!
1 cup of red rice 1.5 cups of water 4 green eschallots 1 thumb of fresh ginger 1 hand full of shredded nori 1 tbsp coconut oil 2 free range eggs
Wash rice and place in rice cooker with coconut oil and 1.5 cups ofwater. Set to cook. Chop eschallots and ginger. Mix eggs together.Add eshallots and nori to rice cooker after rice has been cooking for 12 minutes and stir through.Add eggs and ginger after rice has been cooking for 13 minutes and stir through. Mix together and replace lid on rice cooker. Leave lid on until rice cooker automatically switches off and let stand for a few minutes. Stir and serve.
